Il Giglietto di Palestrina Biscotto tipico – Presidio Slow Food
Il GIGLIETTO è un biscotto secco a forma di giglio, a base di uova, zucchero, farina e limone. La sua storia è legata ai Barberini, principi di Palestrina dal 1630. Dopo la morte di papa Urbano VIII avvenuta nel 1644, a causa dell’avversione del nuovo pontefice Innocenzo X Pamphilj la famiglia fu costretta a riparare in Francia, ospite alla corte di Re Luigi XIV. I Barberini si spostarono con tutto il loro seguito di paggi, cuochi e servitori. Grazie all’intercessione del cardinale Antonio Barberini e del cardinale Giulio Mazzarino si ricucirono i rapporti con la Curia romana attraverso il matrimonio (1653) tra Maffeo Barberini e Olimpia Giustiniani, nipote preferita di Innocenzo X. Il ritorno in Italia della famiglia fu celebrato dai cuochi di corte ideando questo biscotto dalla forma di giglio, che richiama lo stemma araldico della Corona francese. giglietto

The Giglietto is a dry cookie shaped as a fleur-de-lis, prepared with eggs, sugar, flour and lemon. Its history is strictly connected with the Barberini family, lords of Palestrina since 1630. After the death of Pope Urbano in 1644, the family was forced to move to France due to the controversy with Innocenzo X Pamphilj, the new elected pontiff. They were then hosted by the court of King Louis XIV, where they arrived with their entourage made by pages, cooks and servants. They would then restore the relationship in 1653, thanks to the intercession of Cardinal Antonio Barberini and Cardinal Giulio Mazzarino, who arranged the marriage between Maffeo Barberini and Olimpia Giustiniani, Innocenzo’s favourite niece. The comeback to Italy was celebrated by the court’s cooks with this cookie with a fleur-de-lis shape, that refers to the heraldic emblem of the French Crown.
